Vada pav


Ingredients:

  • Ready made pav - As required
  • Potato-2(medium size)
  • Green chilli-1
  • Mustard seeds-1/4 tsp
  • Ginger &garlic-1 tsp ( finely chopped)
  • Curry leaves- few
  • Asafoetida- a pinch
  • Turmeric powder-few pinches
  • oil-1 tsp
  • Butter- to toast
  • Salt- to taste

For batter:

  • Gram flour-1/2 cup
  • Rice flour-2 tsp
  • Cumin-1/4 tsp
  • Turmeric powder- few pinches
  • Water - as required
  • Salt- to taste

For green chutney:

  • Mint leaves-1/2 cup
  • Coriander leaves-1  handfull
  • Green chilli-2
  • Lemon juice-2 tsp
  • Salt - to taste

For sweet chutney:

  • Tamarind extract-1/4 cup
  • Jaggery-1/4 cup
  • Red chilli powder-2 to 3 pinches
  • Chat masala-1 pinch
  • Salt/ black salt- a pinch

For garlic powder:

  • Oil- 2 tsp
  • Garlic-7 to 8 cloves
  • Peanuts-3 tsp
  • Sesame seeds-1 tsp
  • Cumin-1/4 tsp
  • Coriander seeds-1/2 tsp
  • Coconut gratings-2 tsp
  • Salt- 2 pinches

Method:

  • Boil potatoes, peel the skin and mash it roughly.
  • In a pan add oil followed by Mustard seeds,when it splutters add ginger and garlic,curry leaves, asafoetida green chilli.
  • Then add turmeric powder and mashed potatoes.
  • Mix well add salt to taste.
  • Now your potato filling is ready.
  • In a mixie add all the ingredients mentioned for green chutney and grind to fine paste by adding little water.
  • In a kadai add tamarind extract and jaggery. When  jaggery melts add pinch of salt,chat masala and red chilli powder.
  • Mix well and boil it for few minutes. Transfer it to a bowl. Your sweet chutney is ready.
  • Now in a pan add a tsp of oil and add garlic cloves, fry well and remove it.
  • Now add peanuts and dry them till they turn crisp now add all the other items except red chilli powder and roast them well.
  • Finally turn off the flame and add red chilli powder and salt mix well. Once it cools down grind to a coarse powder in a Dry mixie.
  • Now make a batter by using the ingredients mentioned above"for batter". Add water carefully it should be like bhajji batter consistency.
  • Now make balls using potato masala,dip in the batter and deep fry them.
  •  If you have remaining batter add a tsp of pre made garlic coconut mixture to it and little more water, sprinkle it carefully in oil and deep fry them. You will get a crispy topping for your vada pav😜😜( this is optional)..
  • Toast your pav( bun) with butter on both sides
  • Haaabbbaaa.........
  • Finally all the things are ready.
  • Now assemble all the things...
  • On the bottom part of the bun apply green chutney followed by garlic powder, sweet chutney,potato  stuffing. Close it with the top part.
  • Now munch munch munch 😜😜😜😜😋😋😋😋😋



















Notes:

  • You can make the chutneys and garlic powder in advance. You can store the chutneys in air tight container in fridge for up to 5 days to a week.
  • I used ready made bhajji batter and it worked well..
  • The above quantities mentioned gives more of chutney than required so you can store them and use. But you get four potato stuffing . So you can increase the quantity of potatoes to make more.
  • You can also use the chutneys as side dish when you eat the vada pav..
