Taco mexicana






Ingredients:

For patties:( Arancini bean patty)

  • Rajma-1 cup
  • Cooked rice- 1 cup
  • Red chilli flakes-1 tsp
  • Black pepper powder-1/2 tsp
  • Cumin powder-1/2 tsp
  • Chat masala-1/4 tsp( optional)
  • Mexican seasoning-1/2 tsp( optional)
  • Coriander leaves-2 tsp
  • Green chilli-1/2 tsp
  • Lemon juice-1 tbsp
  • Salt- to taste
Cheese slice - As required( optional)
Maida-1/4 cup
Cornflour-1/4 cup
Bread crumbs- As required
Oil- to shallow fry

For taco:

  • Maida/ all purpose flour-1 cup
  • Oil-2 tsp
  • Salt- to taste

For red chutney paste:(Harissa sauce)

  • Red chilli-10 nos
  • Garlic-3 cloves
  • Shahi jeera-1 tsp
  • Lemon juice-2 tsp
  • Olive oil/ refined oil-1 tsp
  • Coriander leaves-3 tsp
  • Mayonnaise-4 tbsp
  • Salt- to taste

Method:

  • For taco, add maida,salt in a mixing dough. Make a dough( chapathi dough consistency)
  • Apply oil on the dough and leave it to rest for about an hour.
  • Mean while let's make red chutney.
  • Boil the red chillies in water for two minutes.
  • In a mixer/ blender add the soaked red chillies,  required water, and items mentioned under' for red chutney paste' except mayonnaise. Grind it to a chutney consistency.
  • Now in a bowl add Mayonnaise, red chutney and mix well. Now your Harissa sauce is ready.
  • Adjust the quantity of red chutney and mayonnaise to suit your taste.
  • Now for the patties:
  • Soak Rajma/ red kidney beans overnight.
  • Next day pressure cooker it by adding little salt . Let it cook for 5 whistles.
  • Also cook rice little mushy.
  • Now in a bowl add cooked Rajma, rice and  all the other ingredients mentioned under" for patties" and make a cutlet shaped patties.
  • Taste the mixture to adjust the spices.
  • Now make maida,cornflour dip by adding water.( Let it be little thick )
  • Dip the patties in maida mixture, coat it with bread crumbs and shallow fry them both sides till they turn golden brown.
  • Now with maida dough make chapathi and cook them till they are 3/4 th done.
  • Keep the flame in low and spread the mayonnaise red chutney paste on the taco
  • Next place cheese slice, followed by Rajma patties.
  • Fold the taco and cook them till the cheese melts.
  • Serve hot.











Notes:

  • Instead of making the maida chapathi you can use the ready made parotta.
  • You can skip the cheese slice part.
