Mango kesari



Ingredients:

  • Rava/ sooji-1 cup
  • Mango pulp-1 or 1/4 cup
  • Sugar - 1 cup
  • Water - 2 Cups 
  • Ghee - 3 tbsp
  • Cashews - Few
  • Pistachios- few
  • Raisins - Few
  • Cardamom powder- A pinch
  • Salt-a tiny pinch

Method:

  • In pan or kadai fry cashews and raisins in ghee and keep it aside. 
  • In the same kadai roast  sooji.
  • Peel the mango,chop it into chunks and grind it to pulp. Doesn't matter if there are few bits of mango here and there.
  • Add water and  mango pulp.
  •  Stir it well. When it boils add roasted rava. Mix well so that no lump forms and let it cook.
  • Add sugar,cardamom powder and a pinch of salt and mix well.
  • Add ghee as you are stirring.
  • Add fried nuts and raisins.
  • Serve. It tastes delicious.












Notes:

  • I used banganappali variety. Can use any   mango variety.
  • You can reduce ghee and add oil.
  • Add sugar only after the rava is completely cooked.
  • Even without food colour it gives a vibrant yellow colour and amazing flavour .Do try it.
