Mango kesari
Ingredients:
- Rava/ sooji-1 cup
- Mango pulp-1 or 1/4 cup
- Sugar - 1 cup
- Water - 2 Cups
- Ghee - 3 tbsp
- Cashews - Few
- Pistachios- few
- Raisins - Few
- Cardamom powder- A pinch
- Salt-a tiny pinch
Method:
- In pan or kadai fry cashews and raisins in ghee and keep it aside.
- In the same kadai roast sooji.
- Peel the mango,chop it into chunks and grind it to pulp. Doesn't matter if there are few bits of mango here and there.
- Add water and mango pulp.
- Stir it well. When it boils add roasted rava. Mix well so that no lump forms and let it cook.
- Add sugar,cardamom powder and a pinch of salt and mix well.
- Add ghee as you are stirring.
- Add fried nuts and raisins.
- Serve. It tastes delicious.
Notes:
- I used banganappali variety. Can use any mango variety.
- You can reduce ghee and add oil.
- Add sugar only after the rava is completely cooked.
- Even without food colour it gives a vibrant yellow colour and amazing flavour .Do try it.
