Ghee mysorepaak

Makes~25 pieces

Ingredients:

  • Gram flour/Besan flour- 1/2 cup
  • Ghee- 1 cup
  • Sugar-1&1/2 cup
  • Water-1/4 cup

Method:

  • Dissolve sugar and boil it to 1 string consistency.
  • Seive gram gram  and keep it ready 
  • When sugar reaches 1 string add the flour and mix it well without any lumps( I used a whisk).
  • Now add ghee 1 tbsp at a time.
  • Keep the flame always in low.
  • As the flour absorbs the ghee continue to add more .
  • Mix well as you are adding the ghee.
  • At one stage you will get nice aroma and the mixture will start to turn pale and frothy.
  • Grease aluminium foil,tray and pour the mixture.
  • Smooth the top and let it cool.
  • When it is warm make slices.








Notes:

  • Never miss the 1 string consistency for sugar syrup. (wipe the back of laddle and check between your thumb and index finger 1 string will appear). 
  • Use the quantity of ghee as mentioned for best results.
  • You can also use 1/4 cup of oil and 3/4 cup of ghee.
  • Do not add the entire ghee at once. Always add little by little.
  • Let the flame be in low always. I used to add ghee,remove it from fire ,mix well and again place it on the flame and mix well and add ghee again.
  • You will get 20 to 25 small pieces for sure.
  • I used 250 ml cup for the recipe.
