Kadalai urundai/ mittai
Ingredients:
- Peanuts/ groundnuts-1 cup
- Jaggery - 1/2 cup
- Water-1/4 cup
- Cardamom powder- a pinch
Method:
- Dissolve the jaggery in water and strain them from impurities.
- Roast the ground nuts till nice aroma comes but make sure the colour doesn't change.
- Remove the outer skin of ground but and keep it aside
- Now boil the jaggery syrup till you reach hard ball consistency.
- Drop jaggery syrup in water , you will be able to gather the syrup and form a tiny hard ball which stays and doesn't dissolve in water.
- Add cardamom powder mix well and add the syrup to roasted ground nuts, mix well and allow it to cool for a min.
- Grease your hand with ghee and make tiny balls when it is still warm.
- It will be very sticky so you must grease your hand with ghee.
- You can use the same method for pottu kadalai urundai,Elli( sesame) urundai.
Notes:
- Paagu vellam works best for this.
- Consistency of jaggery syrup is crucial here as little less or little more consistency spoils urundai.( If you throw the jaggery ball on a steel plate you must hear a ' tunk' sound😊.)
- You can also spread the mixture on ghee greased plate , cut it into pieces when it is warm and make kadalai burfi.
