Brinjal gosthu

 Ingredients:

  • Brinjal-10 nos
  • Oil-4tbsp
  • Ginger garlic paste-1 tsp
  • Onion-1
  • Tomato-2
  • Red chilli powder-1 tsp
  • Coriander powder-1 tsp
  • Turmeric powder-1/4 tsp
  • Tamarind extract- 2 tbsp
  • Coriander leaves- for garnish
  • Black sesame seeds-1 tbsp
  • Salt- to taste

Method:


  • In a kadai add oil followed by sliced onion. When onion turns transparent add ginger garlic paste.
  • When raw smell disappears add finely chopped tomato.
  • Cook till tomato turns mushy.
  • Then add all the spice powders and salt. Add little water if required.
  • Cook till the raw smell disappears.
  • Now add brinjal and tamarind extract . cook covered till brinjal gets cooked.
  • Roast the sesame seeds and powder them finely.
  • Add this to the masala.
  • Garnish with coriander leaves and serve.
  • Pairs best with biryani and chapathi.
