Brinjal gosthu

Ingredients:
- Brinjal-10 nos
- Oil-4tbsp
- Ginger garlic paste-1 tsp
- Onion-1
- Tomato-2
- Red chilli powder-1 tsp
- Coriander powder-1 tsp
- Turmeric powder-1/4 tsp
- Tamarind extract- 2 tbsp
- Coriander leaves- for garnish
- Black sesame seeds-1 tbsp
- Salt- to taste
Method:
- In a kadai add oil followed by sliced onion. When onion turns transparent add ginger garlic paste.
- When raw smell disappears add finely chopped tomato.
- Cook till tomato turns mushy.
- Then add all the spice powders and salt. Add little water if required.
- Cook till the raw smell disappears.
- Now add brinjal and tamarind extract . cook covered till brinjal gets cooked.
- Roast the sesame seeds and powder them finely.
- Add this to the masala.
- Garnish with coriander leaves and serve.
- Pairs best with biryani and chapathi.
