Taro roast

 
Serves-2 to 3


Ingredients:

  • Taro/ chepangizhangu- 1/2 kg
  • Red chilli powder- 1 tsp
  • Coriander powder-1 tsp
  • Turmeric powder-1/4 tsp
  • Oil-2 tsp
  • Mustard seeds-1/4 tsp
  • Urad dhal-1/2 tsp
  •  Curry  leaves- a spring
  • Asafoetida- few pinches
  • Oil- to deep fry

Method:

  • Wash and Pressure cook taro for 2 whistles.
  • Peel it's skin and cut in circles.
  • Deep fry them until golden brown.
  • Now in a pan add 2tsp oil. Add mustard seeds,urad dhal, hing and. Curry leaves.
  • Then add all the spice powders and cook for few seconds.
  • Finally add fried taro and roast well in low flame for 3 mins.
  • Pairs well with any rice dishes😋😋
