Taro roast
Serves-2 to 3
Ingredients:
- Taro/ chepangizhangu- 1/2 kg
- Red chilli powder- 1 tsp
- Coriander powder-1 tsp
- Turmeric powder-1/4 tsp
- Oil-2 tsp
- Mustard seeds-1/4 tsp
- Urad dhal-1/2 tsp
- Curry leaves- a spring
- Asafoetida- few pinches
- Oil- to deep fry
Method:
- Wash and Pressure cook taro for 2 whistles.
- Peel it's skin and cut in circles.
- Deep fry them until golden brown.
- Now in a pan add 2tsp oil. Add mustard seeds,urad dhal, hing and. Curry leaves.
- Then add all the spice powders and cook for few seconds.
- Finally add fried taro and roast well in low flame for 3 mins.
- Pairs well with any rice dishes😋😋
