Brinjal gosthu

serves-3  Ingredients: Brinjal-10 nos Oil-4tbsp Ginger garlic paste-1 tsp Onion-1 Tomato-2 Red chilli powder-1 tsp Coriander powder-1 tsp Turmeric powder-1/4 tsp Tamarind extract- 2 tbsp Coriander leaves- for garnish Black sesame seeds-1 tbsp Salt- to taste Method: In a kadai add oil followed by sliced onion. When onion turns transparent add ginger garlic paste. When raw smell disappears add finely chopped tomato. Cook till tomato turns mushy. Then add all the spice powders and salt. Add little water if required. Cook till the raw smell disappears. Now add brinjal and tamarind extract . cook covered till brinjal gets cooked. Roast the sesame seeds and powder them finely. Add this to the masala. Garnish with coriander leaves and serve. Pairs best with biryani and chapathi.
