Cherry cookies
I always had Interest to bake. But quite afraid to get into Baking as oven which I have no proper temperature settings and I have to guess the temperature. Any way I finally got into Baking after I got a proper oven to bake.. And yes my cherry cookies were the first thing i baked the result was awesomeand I loved it.. Very tasty and everyone will definitely enjoy this. Do try this if.
Ingredients:
- All purpose flour /maida -1 cup
- Butter - little less than1/2 cup
- Sugar - 1/4 cup+ 2 tbsp
- Cherry - 1/4 cup (finely chopped)
- Baking powder-1/8 tsp
- Orange zest- 2 tsp
- Vanilla essence -3/4 tsp
- Salt - A pinch
Method:
- Keep the butter in room temperature. Beat it using a Whisk or hand blender until it is soft.
- Add powdered sugar, orange zest and vanilla essence and salt. Beat it untill it looks creamy.
- Now mix flour, Baking powder and sieve them. Add this to the butter mixture.
- Mix them well so that they hold in shape. ( add 1 or 2 tbsp of flour if the mixture is little gooey).
- Finally add the chopped cherry and mix them.Don't over mix .
- Bring it into a shape of a log and cover them with cling wrap and refrigerate it for about an hour.
- Now unwarp the cling and cut the log into discs not too thin not too thick.
- Place them on Baking tray lined with Baking sheet or silver foil arrange them such that there is enough gap between the cookies.
- Pre heat the oven to 180 degree C and bake them for 15 mins or until the edges of the cookies turn golden in colour.
- Once done they may be soft but becomes crisp once it is completely cooled down.
Notes:
- Pre heating the oven is important.
- Leave enough gap between cookies as they will stick to each other while Baking.
- You can replace tutti frutti instead of cherry.
- You can omit orange zest.
- You can add just 1 or 2 tbsp flour if mixture is gooey not more than that as it may affect the texture of the cookies.
