A wonderful, flavourful side dish for roti / phulkas. Do try..😊
Serves- 2 to 3
Ingredients:
To dry roast and grind:
- Ground nuts/pea nuts- 3 tbsp
- Sesame seeds- 1 tsp
- Dry coconut/ fresh coconut- 1 tbsp
For gravy:
- Lady's finger/ okra: 6 to 7
- Oil - 4 tbsp
- Mustard seeds - 1/2 tsp
- Cumin- 1 tsp
- Fenugreek seeds - 1/4 tsp
- Ginger garlic paste - 1tsp
- Onion -1
- Green chilli -1
- Red chilli powder- 1 tsp
- Coriander powder - 1&1/2 tsp
- Turmeric powder - 1/4 tsp
- Tamarind extract -1/4 cup
- Jaggery - 1/4 tsp
- Coriander leaves -1 tsp
- Salt - To taste
Method:
- Dry roast all the ingredients given under ' dry roast ' table. And grind them to fine paste by adding water.
- In a pan add 1 tbsp oil, split the lady's finger and fry them till they are soft or till the stickiness goes. Keep them aside.
- Now in a pan add 2 tbsp oil, followed by mustard seeds,Cumin, Fenugreek,sliced onion and saute for a minute.
- Then add ginger garlic paste and cook till raw smell disappears and onion turns golden brown in colour.
- Now add the peanut mixture paste followed by red chilli powder, Turmeric and coriander powder. Add salt and 1 cup of water.
- Keep the flame in low cover the pan and let it cook till the oil separates.
- Now add tamrind extract, jaggery followed by fried lady's finger. Cover and cook it again for 10 mins in low flame.
- Finally garnish it with Coriander leaves and serve with roti/ phulkas.
Notes:
- Adjust the spiciness and tanginess to your preference.
- You can add 1/2 tsp of sugar instead of jaggery.
