Paneer makhani
Serves - 4
Paneer makhani is a rich gravy cooked with cream and lots of butter. So diet conscious ppl watch out!!!!
Ingredients:
Paneer - 10 to 12 cubes
Butter -3 to 4 tbsp
Ginger garlic paste - 1 tsp
Cinnamon - 1 small stick
Cardamom -1
Cloves - 2
Jeera/ Cumin- 1 tsp
Fresh Cream - 3 to 4 tbsp
Cashew nut -6 to 7 nos
Onion -1 large size
Tomato -2 medium size
Red chilli powder -1 tsp
Turmeric powder - 1/4 tsp
Cumin/ jeera powder -1/2 tsp
Garam masala - 1 tsp
Kasoori Methi- 1 tsp
Coriander leaves - 1 tsp ( finely chopped )
Sugar - A pinch
Salt - To taste
Method:
- Blanch tomatoes , peel the skin and keep it ready
- In a pan add 1 tbsp of butter. Add whole garam masala, Cumin, roughly chopped onion, ginger garlic paste and saute for a while.
- When onion becomes soft add blanched tomatoes and cook well. Then add red chilli powder, Turmeric powder, Cumin powder and garam masala.
- Cook for 2 mins and then turn off the flame.
- When it cools down grind it to a fine paste.
- Now in a pan add add 2 tbsp of butter and add the makhani gravy in it. Then add Kasoori Methi followed by salt and a pinch of sugar.
- Add water if you feel the gravy is too thick and cook for 5 mins.
- Then add paneer cubes.
- Turn off the flame and add 3 tbsp of fresh cream.
- Garnish it with Coriander leaves.
Notes :
- You can add half butter and half oil if you feel it's too much of butter.
- Do not skip the fresh cream.
- For diet conscious people you can replace oil for butter and milk for cream.
- But makhani gravy needs this richness.
