Elephant yam fry
Serves - 2
Ingredients:
- Elephant yam/ karunai kizhangu- 2 cups chopped into cubes
- Red chilli powder - 1 tsp
- Coriander powder -1&1/2 tsp
- Turmeric powder -1/8 tsp
- Garam masala -1/2 tap
- Oil - to deep fry
- Mustard seeds -1/4 tsp
- Curry leaves - few
- Salt - To taste
Method:
- Take a tsp of tamarind puree and dissolve them in 4 cups of water
- Chop elephant yam into cubes and immerse them in the above mentioned tamarind water.
- Once all chopping is done wash them well and let it dry for few minutes.
- Now deep fry them in oil till its 3/4 th done.
- Drain them in a paper towel and add all the spice powders,salt and mix them so that it is coated well.
- Now in a pan add 2 tsp oil and temper with mustard seeds and Curry leaves.
- Now add the masala mixed yam and cook till it's done completely.
- Serve.
Notes:
- Immersing in tamarind water will remove the itching property of the yam.
- Adjust spices to your preference.
