Drumstick jackfruit seed sambar



Ingredients:

  • Drumstick-2
  • Jackfruit seed -7 to 8 nos
  • Toor dhal -1/2 cup
  • Tamarind extract-1/4 cup( a gooseberry size)
  • Sambar powder-2 tsp
  • Coriander leaves- for garnish

To temper:

  • Oil-2 tsp
  • Mustard seeds- 1/4 tsp
  • Asafoetida- few pinches
  • Curry leaves- few

Method:

  • First allow the jackfruit seeds to dry completely, you can sundry them for a day.
  • Peel off the white part of the seed.
  • Pressure cook it in a cooker for 3 to 4 whistles. Also pressure cook toor dhal.
  • Now in a pan add oil and temper with items mentioned above.
  • Then add drumstick, add salt, water for the drumstick to get cooked. 
  • Once it's done add tamarind extract, sambar powder allow it to cook for 3 to 4 mins and then add toor dhal, cooked jackfruit seeds,required water ( to the consistency you prefer).
  • Allow it to boil for a min. Finally add coriander leaves and serve with rice.

Notes:

  • Add more or less dhal to your preference.
  • Jackfruit seeds tastes amazing when it is added to sambar.
  • You can make sambar with Jack fruit seeds alone. Or combine with any other vegetables you prefer.
