Potato chukka

Serves-2

Ingredients:

  • Potato-3 
  • Shallots -1 cup
  • Onion-1
  • Tomato-1
  • Capsicum-1/2 cup
  • Green chilli-1
  • Red chilli powder-1/2 tsp
  • Turmeric powder-1/4 tsp
  • Coriander powder-1 tsp
  • Black pepper powder-1/2 tsp
  • Garam masala-1/4 tsp( optional)
  • Ginger garlic paste-1 tsp
  • Oil- 5 tbsp
  • Fennel seeds-1/2 tsp
  • Curry leaves- few
  • Coriander leaves- for garnish
  • Salt- to taste

Method:

  • Peel the potatoes skin dice them into cubes and keep them immersed in water till you cook.
  • Now in a non stick pan add oil, followed by fennel seeds, Curry leaves, onion ,gg paste and mix well.
  • When onion turns transparent add tomato and capsicum cook till tomato turns soft.
  • Now add all the spice powders, salt and cook for about a min.
  • Now drain the potato from water and add them.
  • Mix well and cook covered in a low flame.
  • Once potatoes are cooked remove the lid and cook till potato gets a roasted texture.
  • Mix gently every now and then.
  • Finally add coriander leaves and  pepper powder mix well and serve.
  • Goes best with roti/ chapathi.
  • Can be had with rice too.





Notes:

  • You can replace potato with mushroom, cauliflower.
  • Adjust spice level to your preference.
  • When making with cauliflower blanch them in salt water once and then add .
  • Do not add more tomato. If you want you can add more onion.
  • You can avoid big onion and add more of shallots .
  • Can use regular onion too. But tastes best when  made with shallots.
