MAA vadu pickle
Ingredients:
- Vadu mango- 1 kg
- While red chilli-15 nos
- Mustard seeds-1&1/2 tsp
- Turmeric powder-1 tsp
- Castor oil-2 tsp
- Rock Salt-200 gms
Method:
- Select good variety of vadu maanga. Let it be with stem.
- Wash it and drain them and wipe it clean and dry. Cut the stems leaving a bit of stem intact with mango.
- In a wide mouthed plastic container add the mangoes ,2 tsp of castor oil and mix well so that all the mangoes get coated with oil.
- Now add rock salt and mix well. Close the container and keep it aside.
- Shake well thrice a day for three days.
- Mean while sundry red chilli and mustard seeds.
- In a mixer add red chilli, mustard seeds,turmeric powder or whole turmeric and grind to fine powder.
- Mix this with 4 days ago salted vadu mango ( by this time most of the salt would have dissolved and there will be salt brine in vadu mango).
- Now mix this mixture thrice a day for 4 days. So that the entire salt would get dissolved and a good brine would have formed. NEVER EVER SKIP THE STEP OF MIXING THE PICKLE FOR 4 DAYS TWICE AT LEAST.
- You can now start consuming yummy yummy vadu maanga with curd riceπππ.
- Store it in glass or porcelain container in fridge.
Notes:
- You can also use whole turmeric( viraali manjal) if so sun dry it also.
- You can also use mustard seeds powder-1 tsp,red chilli powder-2 tsp, turmeric powder-1&1/2 tsp. But using fresh ingredients brings best taste.
- Good variety vadu mango will be quite costly between 210 to 300 a kilo.
- Never buy cheap variety vadu mango the one without stem as the entire pickle will get spoiled. Because these mangoes are the one which fell from tree and not hand picked.
