Spinach soup
Ingredients:
- Spinach-1 bunch
- Shallots-5 to 6
- Garlic-2 cloves
- Bay leaf-1
- Cumin powder-1/2 tsp
- Black pepper powder- 1/2 tsp
- Gram flour-1/2 tsp( optional)
- Fresh cream- 2 tbsp
- Oil-1 tsp
- Salt- to taste
- Wash and remove the leaf part of spinach
- In a pan add oil followed by chopped onion and garlic. Saute for a min.
- Then add chopped spinach saute till it reduces in volume. Then add all the spices, gram flour( if adding). Mix well.
- Add 2 cups of water ,when it comes boil turn off the flame and allow it to cool down.
- Remove the bay leaf and transfer into aa blender/ mixer and grind it.
- Again boil it once. Add fresh cream and serve hot with croutons.
Notes:
- You can avoid fresh cream .
- Adding gram flour gives good thickness and mild flavour to soup.
- You can add any one among fresh cream or gram flour as the purpose of both is to give thickness to the soup.
