Spinach soup


Ingredients:

  • Spinach-1 bunch
  • Shallots-5 to 6
  • Garlic-2 cloves
  • Bay leaf-1
  • Cumin powder-1/2 tsp
  • Black pepper powder- 1/2 tsp
  • Gram flour-1/2 tsp( optional)
  • Fresh cream- 2 tbsp
  • Oil-1 tsp
  • Salt- to taste

  • Method:

  • Wash and remove the leaf part of spinach 
  • In a pan add oil followed by chopped onion and garlic. Saute for a min.
  • Then add chopped spinach saute till it reduces in volume. Then add all the spices, gram flour( if adding). Mix well.
  • Add 2 cups of water ,when it comes boil turn off the flame and allow it to cool down.
  • Remove the bay leaf and  transfer into aa blender/ mixer and grind it.
  • Again boil it once. Add fresh cream and serve hot with croutons.




Notes:

  • You can avoid fresh cream .
  • Adding gram flour gives good thickness and mild flavour to soup.
  • You can add any one among fresh cream or gram flour as the purpose of both is to give thickness to the soup.
