Bombay masala

I don't how this masala got this name nor how it is related to bombay. Be it any reason what I like in this is,it is sooo easy to make.It goes well with dosa and chapathi.
Ingredients:
- Onion -1
- Tomato -1
- Ginger -1 inch piece
- Besan/ gram flour - 1 tbsp
- Turmeric powder -1/4 tsp
- Coriander leaves -1 tbsp
- Green chilli -3 to 4
- Salt -To taste
To temper:
- Oil -2 tsp
- Mustard seeds -1/2 tsp
- Urad dhal -1 tsp
- Channa dhal -1tsp
- Asafoetida -A generous pinch
- Curry leaves -A spring
Method:
- In a kadai/pan add oil and temper with items mentioned under 'to temper'.
- Now add finely chopped onion,when it turns soft add grated ginger and chopped tomato and slit green chilli.
- When tomato turns soft add one cup of water and let it boil.
- Now mix besan flour with 1/4 cup of water without any lumps.
- Add this to the boiling water and stir well so that there are no lumps.
- When masala comes to boil turn off the heat and add coriander leaves.
- Serve with dosa/chapathi/poori
Notes:
- Ginger is very important as this is the only flavouring agent.
