Paneer Biryani
Serves -3
Ingredients:
- Yoghurt- 1/2 cup
- Basmati rice-1 cup
- Paneer- 10 to 15 cubes
- Onion -2
- Cauliflower/ capsicum - 1/2 cup ( optional)
- Mint leaves -1 cup
- Red chilli powder -1&1/2 tsp
- Turmeric powder - 1/4 tsp
- Biryani masala powder- tsp
- Ginger garlic paste - 1 tsp
- Oil -2 tbsp
- Saffron - few strands
- Milk - 2 tbsp
- Salt- to taste
To temper:
- Oil/ ghee - 2tsp
- Cinnamon - A small piece
- Cardamom-1
- Cloves-2
- Bay leaf -2
Method:
- Make the imagination ready by mixing biryani masala, red chilli powder, turmeric powder, ginger garlic paste and salt with yoghurt.
- Marinate Paneer, onion and capsicum ( if adding), mint leaves in the above prepared yoghurt marination for 1 hour. Soak saffron in 2 tbsp of warm milk.
- Soak basmati rice for 1/2 an hour.
- Slice another onion and fry till golden brown and keep aside.
- In a pressure cooker temper with items mentioned under ' to temper.
- Now add the marinated Paneer followed by soaked basmati rice, 1&1/2 cup water, fried onion, remaining mint leaves, salt to taste and saffron soaked milk.
- Pressure cook for 3 whistles.
Notes:
- I used cauliflower, so I blanched it once then fried a little and then I added it to the gravy for cooking.
- You can make this just with paneer alone.
- I made it using rice cooker.
- Do not use very sour yoghurt for this.
- Adjust taste to your preference ,like adding spice, lemon juice or tomato is up to you.
