Paneer Biryani





Serves -3


Ingredients:

  • Yoghurt- 1/2 cup
  • Basmati rice-1 cup
  • Paneer- 10 to 15 cubes
  • Onion -2 
  • Cauliflower/ capsicum - 1/2 cup ( optional)
  • Mint leaves -1 cup
  • Red chilli powder -1&1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Biryani masala powder- tsp 
  • Ginger garlic paste - 1 tsp 
  • Oil -2 tbsp
  • Saffron - few strands
  • Milk - 2 tbsp
  • Salt- to taste

To temper:

  • Oil/ ghee - 2tsp
  • Cinnamon - A small piece
  • Cardamom-1
  • Cloves-2
  • Bay leaf -2 

Method:

  • Make the imagination ready by mixing biryani masala, red chilli powder, turmeric powder, ginger garlic paste and salt with yoghurt.
  • Marinate Paneer, onion and capsicum ( if adding), mint leaves in the above prepared yoghurt marination for 1 hour. Soak saffron in 2 tbsp of warm milk.
  • Soak basmati rice for 1/2 an hour.  
  • Slice another onion and fry till golden brown and keep aside.
  • In a pressure cooker temper with items mentioned under ' to temper.
  • Now add the marinated Paneer followed by soaked basmati rice, 1&1/2 cup water, fried onion, remaining mint leaves, salt to taste and saffron soaked milk.
  • Pressure cook for 3 whistles.











Notes:

  • I used cauliflower, so I blanched it once then fried a little and then I added it to the gravy for cooking.
  • You can make this just with paneer alone.
  • I made it using rice cooker.
  • Do not use very sour yoghurt for this.
  • Adjust taste to your preference ,like adding spice, lemon  juice or tomato is up to you.
