Brinjal kaara kuzhambu
Ingredients:
- Brinjal -4
- Onion -1 large ( finely chopped)
- Tomato -1( finely chopped)
- Garlic -7 cloves
- Tamarind - a goose berry size
- Kuzhambu powder - 1 &1/4 tsp
- Turmeric powder -1/4 tsp
- Red chilli powder -1/2 tsp
- Coriander powder -1 tsp
- Jaggery -1/4 tsp
- Salt - To taste
To temper:
- Sesame oil-2 tbsp
- Mustard seeds -1/4 tsp
- Methi seeds -1/4 tsp
- Urad dhal -1/2 tsp
- Channa dhal-1/2 tap
- Cumin -1/2 tsp
- Asafoetida- A generous pinch
- Red chilli-1
- Curry leaves -A spring
Method:
- Add 1.5 cups of water to the tamarind,extract juice and add all the spice powders and salt in it and mix well.
- In a pan add oil followed by all the items mentioned under ' to temper' in the same order.
- Then add garlic cloves and onion. When onion turns transparent add tomato.
- When tomato turns mushy add brinjal.
- Saute for 30 seconds and then add the tamarind mixture. ( Taste the tamarind mixture before adding for any spice adjustments))
- Keep it in medium flame Cover with a lid.
- Cook till the brinjal is done.
- It should boil for at least 10 mins.
- Finally add 1 more tsp of oil and Curry leaves and cover it.
- Serve.
Notes:
- You can store this in refrigerator and is it for 3 days.
- Kuzhambu powder can be either home made or shop one.
- Refer my 'Kuzhambu milaga thool'post for making home made powder. This powder works best for these types of Kuzhambu.
