Baby corn masala
Serves-4
Ingredients:
- Babycorn-7 to 10 nos
- Paneer-10 cubes( optional)
- Red chilli powder-1/2 tsp
- Garam masala-1/4 tsp
- Turmeric powder-1/4 tsp
- Fresh cream-3 tbsp
- Coriander leaves- for garnish
- Salt- to taste
To grind:
- Onion-1
- Tomato -2
- Ginger-1 inch piece
- Garlic-3 pods
- Green chilli-2
- Oil-1 tsp
To temper:
- Oil-2 tsp
- Cinnamon- small piece
- Cardamom-1
- Cloves-4
- Cumin-1/4 tsp
- Bayleaf-1
Method:
- In pan saute all the items mentioned under to grind for 5 mins( till tomato turns mushy).
- Bring it to room temperature and grind to a fine paste.
- Slice baby corn and cook it ( boil it)with water,salt for about 10 to 15 mins.
- Now in a pan add oil and temper with items mentioned under'to temper'.
- Then add the ground paste,spice powders,salt and cook closed in a low flame till oil separates.
- Then add cooked baby corn, required water and boil it for 3 to 4 mins.
- Finally add paneer and fresh cream and mix well. Cook for about a min and turn off the flame.
- Serve hot with pulao,roti.
Notes:
- Add water to get the consistency you prefer.
- Can add black pepper powder.
- Can replace oil with ghee and can add Ginger garlic paste instead of adding it a whole.
- You can omit fresh cream and add milk. If adding milk be careful as it may curdle. Add little by little.
- You can add ground cashew paste instead of fresh cream.
