Noodles fried rice

I tried this one and came out very well.. perfect for dinner, parties and lunch box. Kids would love it๐Ÿ˜‹






Serves-3

Ingredients:

  • Basmati rice -1 cup
  • Noodles( broken)-1 cup
  • Water -1 &1/2 cup
  • Cabbage -1 cup(chopped)
  • Carrot -1
  • Beans -5 to 6 nos
  • Capsicum -1 no
  • Spring onion -1 bunch
  • Garlic -2-3 pods
  • Oil/Olive oil -2 tbsp
  • Pepper powder -1 tsp (or as needed)
  • Soy sauce -2 tsp
  • Salt -To taste

Method:

  • Soak basmati rice for 30 mins and then cook it with 1&1/2 cups of water.(pressure cook it for 2-3 whistles).
  • Break noodles into tiny pieces and cook them in water ( by adding little salt and a tsp of oil). Once done strain them and allow to cool.
  • Finely chop the veggies,chop the white and green part of spring onion and keep them separately.
  • Now in a pan add oil,followed by garlic and white part of spring onion.
  • Now add finely chopped carrot and beans cook them for 2 -3 mins.
  • Then add cabbage and capsicum cook them for 3 more mins.(Capsicum and cabbage should retain their crunchiness).
  • Now add salt,pepper powder,soy sauce and mix well in high flame.(If possible toss them in high flame as how they do in road side shops).
  • Finally add cooked basmati rice,noodles and stir well.Finally add green part of spring onion.
  • Check for salt and serve with any type of manchurians/tomato sauce.







Notes:



  • Cool the cooked basmati rice before mixing so that you will get individual grains.
  • Soaking basmati rice before cooking gives you nice individual and soft grains.
  • Add pepper powder as per your taste.
  • You can use ready made fried rice powder also.
  • Take care not to turn noodles mushy.
