Brinji Rice
Serves -2 to 3
I hate calling biryani as brinji.Once while I was browsing I saw this recipe with the above name.So I also gave the same name to it as I could not find any other better name for this recipe..Taste wise it was good and quite easy to make.Ingredients:
- Oil -3 tbsp
- Basmati rice -1 cup
- Water -1&3/4 cups to 2 cups
- Cinnamon -1 small stick
- Cardamom -1
- Cloves -2
- Bay leaf -1
- Ginger garlic paste -1 tsp
- Onion -1 (large)
- Tomato -1
- Green chilli -2 nos
- Mixed vegetables-1&1/2cups (I used carrot,beans,peas,baby corn,potato)
- Coriander leaves -2 tbsp
- Mint leaves -1 tbsp
- Red chilli powder -1 tsp
- Coriander powder -1&1/4 tsp
- Turmeric powder -1/4tsp
- Salt -To taste
Method:
- Soak basmati rice for 30 mins.
- Now in a pan add oil followed by whole garam masala.
- Add sliced onion followed by ginger garlic paste and green chilli.
- When onion turns transparent add vegetables and saute for 3 mins.
- Then add finely chopped tomatoes and saute till toamto turns mushy.
- Now add turmeric,coriander and red chilli powder. Saute it for a min and then add water.
- Now add salt and finely chopped mint and coriander leaves.
- Finally add basmati rice and let it cook.(I used rice cooker)
- If you use pressure cooker, pressure cook it for 2-3 whistles.
- Serve it with raita.
Notes:
- You can add vegetables of your choice.
- Soaking basmati rice gives you soft and individual grains.
