Coconut rice



Ingredients:

  • Coconut Oil -2 tbsp
  • Coconut gratings -1/2 cup
  • Cooked rice -2 cups
  • Mustard seeds -1/4 tsp
  • Urad dhal -1 tsp
  • Channa dhal -1 tsp
  • Green chilli -3 nos
  • Cashew nuts -5 to 6
  • Curry leaves -A spring
  • Coriander leaves -1 tbsp
  • Asafoetida -1/4 tsp
  • Salt -To taste

Method:

  • Add coconut oil in a pan when its hot enough add mustard seeds when it splutters add urad and channa dhal.
  • Add green chilli,asafoetida,cashew nut,curry leaves and finally add coconut scrappings. cook for a min ,add salt and coriander leaves.Turn off the flame.
  • Mix it with pre cooked rice.
  • Check for salt and serve.
  • Goes well with any crisps and potato fry/poriyal/curry.



Notes:

  • You can use regular oil instead of coconut oil.
