Coconut rice
Ingredients:
- Coconut Oil -2 tbsp
- Coconut gratings -1/2 cup
- Cooked rice -2 cups
- Mustard seeds -1/4 tsp
- Urad dhal -1 tsp
- Channa dhal -1 tsp
- Green chilli -3 nos
- Cashew nuts -5 to 6
- Curry leaves -A spring
- Coriander leaves -1 tbsp
- Asafoetida -1/4 tsp
- Salt -To taste
Method:
- Add coconut oil in a pan when its hot enough add mustard seeds when it splutters add urad and channa dhal.
- Add green chilli,asafoetida,cashew nut,curry leaves and finally add coconut scrappings. cook for a min ,add salt and coriander leaves.Turn off the flame.
- Mix it with pre cooked rice.
- Check for salt and serve.
- Goes well with any crisps and potato fry/poriyal/curry.
Notes:
- You can use regular oil instead of coconut oil.
