Vegetable Upma

Don't know why there are many haters for upma.Probably the making makes the difference between hating it and loving it. I like upma especially when my mom makes it.

Ingredients:

  • Rava/Sooji -1 cup
  • Onion -1
  • Tomato -1
  • Carrot -1 
  • Beans -6 to 7 nos
  • Peas -1/2 cup
  • Potato -1
  • Green chilli -4 nos
  • Curd -2 tbsp 
  • Coriander leaves -1 tbsp
  • Salt -to taste

To temper:

  • Oil-2 tbsp
  • Mustard seeds-1/4 tsp
  • Urad dhal -1/2 tsp
  • Channa dhal -1/2 tsp
  • Curry leaves -1 spring
  • Asafoetida -A pinch
  • Ginger -1/2 an inch (optional)

Method:

  • Dry roast rava/sooji for about 2 minutes till you get nice aroma. This avoids formation of lumps while making upma.
  • Finely chop carrot.potato and beans.
  • In a pan temper with items given under 'to temper'.
  • Add onion and green chilli.When onion turns transparent add the vegetables.
  • Once the vegetables are cooked add tomato add salt.
  • when tomato turns soft add 2&1/2cups of water.When it comes to boil add yoghurt mix well,Check for salt and spice and add the roasted rava.
  • Mix gently so that there are no lumps.Add coriander leaves let it cook covered in a low flame for 5 minutes.
  • Once done serve.








Notes:

  • Adjust water quantity to your preference. As some like quite gooey type and some want to be quite dry.
  • Adding curd enhances the taste.I used frozen peas.
