Lemon Rice



Ingredients:

  • Oil -2 tbsp
  • Lemon -1 small
  • Cooked rice -2 cups
  • Mustard seeds -1/4 tsp
  • Urad dhal -1 tsp
  • Channa dhal -1 tsp
  • Peanuts -3 tbsp
  • Green chilli -3 nos
  • Cashew nuts -5 to 6
  • Turmeric powder -1/4 tsp
  • Curry leaves -A spring
  • Coriander leaves -1 tbsp
  • Asafoetida -1/4 tsp
  • Salt -To taste

Method:

  • In a pan add oil followed by all the above mentioned items except turmeric powder and lemon juice.
  • When all the dhals and cashew nut turn golden brown turn off the flame and then add turmeric powder.
  • After the mixture cool downs a bit dd the lemon juice.
  • Add this mixture to pre cooked rice and mix well.
  • Serve.Goes well with potato curry/poriyal or any fryums.


Notes:

  • You can also add 2 tbsp of grated coconut when you are mixing with rice for additional flavour and taste.But it reduces the shelf life .
  • Adjust lemon juice according to the tanginess you prefer.
