Lemon Rice
Ingredients:
- Oil -2 tbsp
- Lemon -1 small
- Cooked rice -2 cups
- Mustard seeds -1/4 tsp
- Urad dhal -1 tsp
- Channa dhal -1 tsp
- Peanuts -3 tbsp
- Green chilli -3 nos
- Cashew nuts -5 to 6
- Turmeric powder -1/4 tsp
- Curry leaves -A spring
- Coriander leaves -1 tbsp
- Asafoetida -1/4 tsp
- Salt -To taste
Method:
- In a pan add oil followed by all the above mentioned items except turmeric powder and lemon juice.
- When all the dhals and cashew nut turn golden brown turn off the flame and then add turmeric powder.
- After the mixture cool downs a bit dd the lemon juice.
- Add this mixture to pre cooked rice and mix well.
- Serve.Goes well with potato curry/poriyal or any fryums.
Notes:
- You can also add 2 tbsp of grated coconut when you are mixing with rice for additional flavour and taste.But it reduces the shelf life .
- Adjust lemon juice according to the tanginess you prefer.
