Tomato Thokku (using pressure cooker)

Serves-2

Ingredients:

  • Onion-1
  • Tomato-3 medium size
  • Red chilli powder-1 tsp
  • Turmeric powder-1/4 tsp
  • Coriander powder-1&1/4 tsp
  • Ginger garlic paste-1/4 tsp
  • Coriander leaves- for garnish
  • Sugar- few pinches
  • Salt- to taste

To temper:

  • Oil- 3 tbsp
  • Mustard seeds-1/4 tsp
  • Urad dhal-1/2 tsp
  • Curry leaves - few
  • Asafoetida- few  pinches

Method:

  • In a pressure cooker add oil and temper with items mentioned under 'to temper'.
  • Add finely chopped onion, saute for 2 mins and add finely chopped tomato.
  • Add all the spice powders,salt,sugar and add 1&1/2 cup of water.
  • Pressure cook for 3 whistles.
  • After the pressure releases cook the thokku 
  • For some more time till the water evaporates and thokku thickens.
  • Garnish with coriander leaves and serve.
  • This Thokku goes well with all the items.

Notes:

  • You can add equal quantity of onion and tomato.
