Dum puliyodharai( temple style)
Ingredients:
To roast and grind:
- Coriander seeds- 2 tsp
- Whole black pepper-1/2 tsp
- Fenugreek seeds-1/2 tsp
- Cumin-1/2 tsp
- Sesame seeds-1 tbsp
For puliyodharai:
- Sesame oil-4 tbsp
- Mustard seeds-1/2 tsp
- Urad dhal-1 tsp
- Channa dhal- 2 tsp
- Red chilli-3
- Asafoetida-1/4 tsp
- Turmeric powder-1/4 tsp
- Curry leaves- few
- Ground nut-2 tbsp
- Tamarind- small lemon size
- Rice-1 cup
- Water-2 cups
- Salt - to taste
Method:
- Wash and soak rice for 30 mins.
- Roast all the ingredients mentioned above,cool and powder it finely.
- In a non stick pan add oil fry ground nut untill crisp and remove it.
- Now in the same oil add Mustard seeds followed by urad dhal,Channa dhal,curry leaves and red chilli.
- When it turns golden brown in colour add tamarind extract(1 cup) and 1 cup of water.
- Add turmeric powder,salt and let it boil.
- When it comes to boil add soaked rice close with a lid and let it cook in low flame.
- When rice is almost cooked add 2 to 3 tsp tsp of freshly made powder and mix well.
- Cook closed for few more minutes.
- Taste and adjust spice powder and salt to your preference.
Notes:
- Can use boiled rice or regular rice.
- Can store the extra puliyodharai powder and use whenever required.
- Tamarind water + ordinary water=2 &1/4 cup. Be cautious with water quantity.
