Brinjal gotsu

This gotsu is more or less similar to sambar. I got two recipies for gotsu but I chose this one because my main dish washer pongal and for pongal side dish must be quite spicy
Ingredients:
- Moong dhal-1/4 cup
- Brinjal -2
- Carrot -1 small
- Onion -1
- Tomato -1
- Turmeric powder-1/4 tsp
- Tamarind extract-1/4 cup
- Coriander leaves- 1tbsp
- Salt - To taste
To dry roast and grind:
- Channa dhal-1/2 tsp
- Urad dhal-1/2 tsp
- Red chilli-4
- Coriander seeds -1 tsp
- Cumin -1/4 tsp
To temper:
- Oil -1 tsp
- Mustard seeds-1/2 tsp
- Curry leaves - few
- Asafoetida- A pinch
Method:
- Pressure cook moong dhal and chopped carrot.
- Dry roast the items mentioned above and grind them into fine powder.
- Chop Brinjal into tiny pieces.
- In a pan add oil and temper with items given.
- Then add onion when it turns transparent add tomato and Brinjal.
- Cook till Brinjal becomes soft. Add turmeric powder , salt and tamrind extract.
- When it boils add cooked moong dhal carrot mixture. Add enough water.
- Then add dry roasted powder. Allow it to boil for 2 mins.
- Finally add coriander leaves and turn off the flame.
Notes :
- The other recipe was quite easy with no dry roasting. And no tamrind extract.
- Just add green chilli for spice and proceed with rest of the steps.
