Eggless Honey cake
Serves -4
Honey cake is my favourite. When I saw this eggless honey cake recipe I immediatly wanted to try it. It came out perfect and also tasted good. The cake recipe is exactly the same as orange cake. Here we are just adding honey syrup and jam, coconut topping.
Ingredients:
- All purpose flour/ maida -1&1/4 cup
- Baking powder -1tsp
- Baking soda -1/2 tsp
- Orange zest -1 tsp
- Orange juice -1/2 cup
- Lemon juice -1 tsp
- Condensed milk -3/4 cup plus 1 tbsp
- Powedered Sugar- 2 tbsp
- Butter or oil - 1/2 cup ( I used sunflower oil)
- Vanilla essence-1 tsp
For syrup:
- Honey -1/4 cup
- Water - 1/2 cup
- Sugar -2 tbsp
For topping:
- Mixed fruit/ Strawberry jam - 3 tbsp
- Sugar -1 tsp
- Dessicated coconut - As needed
Method :
- In a bowl mix flour, baking powder and soda. Seive them twice to ensue even mixing.
- In a bowl mix sugar and all wet ingredients ( orange juice, condensed milk ,lemon juice, oil, vanilla essence).
- Whisk them well.
- Make a dent in the flour and pour this wet mixture. Mix them well to get a lump less batter. Finally grate orange zest .Mix once again.
- Pre heat the oven to 180 degree.
- Grease cake pan with butter and dust it with some flour.
- Pour the cake batter and bake it for 30 mins or till a tooth pick inserted in cake comes out clean.
- Allow it to cool and invert the cake.
- For syrup dissolve sugar in 1/2 cup of water and just warm it .
- Mix honey in that syrup.
- Pour the syrup all over the cake using a spoon.
- Now in another pan heat jam with sugar till it melts and gets blended with the jam well.
- Then apply the jam topping. I applied the jam topping on sides also.
- Now sprinkle the Dessicated coconut on the topping.
- Serve.
Notes :
- I initially thought that the cake would get get soaked up in syrup and dint add all but I later realised that the cake needed more honey syrup.
- So don't hesitate while adding syrup just add it. Your cake will be super moist and tasty.
