Mint Pulao



Serves -2 to 3

 Ingredients:

  • Basmati rice-1 cup
  • Cauliflower-10 to 12 florets
  • Potato -2 large
  • Onion -1
  • Turmeric powder -1/4tsp
  • Garam masala  -1 tsp
  • Salt -ToTaste 

To grind: 

  • Mint leaves -1 cup
  • Ginger -1inch piece 
  • Garlic -3 clove
  • Lemon juice -2 tsp
  • Green chilli -3

To temper :

  • Ghee / oil -3 tbsp
  • Cloves -2
  • Cinnamon -1 inch piece 
  • Cardamom -1

Method :

  •  Soak Basmati rice for 20 to 30 mins.
  • Blanch Cauliflower with salt and turmeric powder. Cut potatoes into bite size pieces.
  • Grind ingredients mentioned under to grind and keep ready.
  • In a pan  temper with items mentioned under 'temper'. 
  • Now add sliced onion . When it turns transparent add Cauliflower and potato.
  • When the vegetables are 3/4 th done add the mint masala, salt, Turmeric powder and mix well.
  • When vegetables are done add 1&1/4 cup water . When water boils add soaked Basmati rice.
  • Close the pan and cook in low flame.
  • If you are pressure cooking wait for 2 to 3 whistles.
  • Serve with Raita. 
                    




Notes:

  •  You can add any veggies of your choice like peas, carrot etc..
