Onion vadam
Ingredients:
- Rice -1 cup
- Water -3 to 3&1/2 cups
- Shallots-15 to 20 nos
- Cumin-1 tsp
- Green chilli - as required
- Salt- 3/4tsp
Method:
- Wash rice twice.
- Grind shallots,green chilli,cumin and salt.
- Add this paste to rice and add 3 cups of water.
- Pressure cook for 6 to 7 whistles.
- Once done mash the rice well so that it turns mushy.
- Now pinch them in a plastic sheet or plate as vadams.
- Sun dry for two days.
- Do not forget to turn the vadams and sundry once again.
- Store them in a air tight container and deep fry them as and when required.
Notes:
- Add very less salt as it will be salty once it is dried.
- Add 1/2 more cup of water if necessary while mixing the rice.
