Kara Kuzhambu

Kara kuzhambu is a favorite to many...Whenever I go to hotel I first taste kara kuzhambu.I just love it.I got this recipe from a website and the result was good. You can make this with or without vegetables .Let's see its preparation.



Ingredients:

  • Drumstick -1 or 2
  • Brinjal -4-5nos
  • Onion -1 large
  • Tomato -2
  • Garlic pods -6 to 7 nos
  • Red chilli powder -1 tsp
  • Turmeric powder -1/4 tsp
  • Jaggery -1/4 tsp
  • Tamarind -Lemon size
  • Salt -To taste

To temper:

  • Sesame oil -4 tbsp
  • Mustard seeds -1/4 tsp
  • Urad dhal -1/2 tsp
  • Channa dhal -1/2 tsp
  • Fenugreek seeds -1/4 tsp
  • Cumin/jeera-1/2 tsp
  • Curry leaves -Few

To grind:

  • Coconut scrappings -1/2 cup
  • Onion -1

Method:

  • Grind onion and coconut to a paste.
  • In a pan add oil and temper with items given under 'to temper'.
  • Then add onion garlic pods and saute till onion turns transparent.Then add tomato and cook till it turns mushy.
  • Add salt and turmeric powder followed by drumstick.Add water for the drumstick to get cooked.
  • When drumstick is half cooked add brinjal,red chilli powder followed by tamrind extract (about 1/2 cup of tamarind extract) and cook till the raw smell of tamarind disappears.
  • Then add the coconut paste and required water and let it boil.
  • Finally add jaggery and mix well.
  • Serve with steaming rice.


















Notes:

  • You can add any one of the vegetable also.
  • If you want add coriander powder along with red chilli powder.
  • Some add sambar powder instead of red chilli and coriander powder.
  • Adjust the tamarind extract according to its sourness.
