Elephant foot yam poriyal

This Elephant foot yam is low in saturated fat,cholestrol and sodium.It is also a good source of dietary fiber,Vitamin C,Potassium and Manganese.
I love it when it is added in avial,kootu.I tried this recipe ( I don't remember where I got this recipe from) it's really fantastic to have this veggie in this form.

Ingredients:

  • Elephant foot yam -1 cup sliced
  • Red chilli powder -1/2 tsp
  • Turmeric powder -1/4 tsp
  • Tamarind extract -1 tbsp
  • Asafoetida -A generous pinch
  • Oil -4tbsp
  • Salt -To taste


Method:

  • Clean the yam and slice it for about 1/2 cm in thickness.
  • Boil water and cook it till 3/4 th of yam is done.Once done drain the water completely.
  • Now mix spices,tamarind juice,salt and marinate it for about 10 mins.
  • In a dosa tawa add oil and toast the yam well on both sides till it is completely cooked.
  • Serve.




Notes:

  • Cleaning this particular yam may cause itching in your hands,so better be careful while cleaning.
