Shallots Ghojju

Shallots/small onion ghojju is my husband's favourite dish.Ghojju is something like 'puli kuzhambu' but not exactly.It has some special type of  powder to be made.Has two type of preparation one by adding coconut and without coconut.As my husband like without coconut most of my ghojju will be without coconut.Let's get into the recipe.


Ingredients:


  • Shallots/Small onion -10-15 nos
  • Tamarind -lemon size
  • Oil -2 tbsp
  • Mustard seeds -1/4 tsp
  • Urad dhal -1/2 tsp
  • Curry leaves -Few
  • Asafoetida -A generous pinch
  • Turmeric powder -1/4 tsp
  • Ghojju powder -1 tbsp
  • Jaggery -Less than 1/4 tsp (optional)
  • Salt -To taste

To make ghojju powder:


  • Urad dhal -3 tsp
  • Channa dhal -1tsp
  • Fenugreek seeds -1/2 tsp
  • Red chilli -4-5nos
  • Sesame seeds -3/4 tsp
  • Oil -1/2 tsp

Method:


  • To make all ghojju powder roast  all the ingredients given under 'to make ghojju powder 'with little oil. Grind it to fine powder after.
  • Now in a pan add oil and temper it with mustard seeds,Asafoetida,Curry leaves,Green chilli.
  • Then add shallots,turmeric powder and fry till it turns transparent. Extract juice from tamarind (about 3/4 of cup)
  • Add this to the onion and add 1 cup of water.Add salt.
  • Allow it to boil till raw smell of  tamarind disappears.
  • Then add grounded ghojju powder (About 1&1/2 tsp).Ghojju will start to thicken as soon as you add this powder.
  • Allow it to boil for 2 more mins.
  • Finally add jaggery and coriander leaves and turn off the flame.
                                      







Notes:

  • Use sesame oil for best taste.
  • Adjust tamarind according to the sourness you prefer.
