Arbi (Seppankizhangu) roast
Ingredients:
- Seppankinzhagu/arbi/ colacassia-1/4 kg
- Onion - 1
- Garlic -2 cloves
- Turmeric powder - 1/4tsp
- Red chilli powder - 1 tsp
- Salt - To taste
To temper :
- Oil - 4 tbsp ( or as needed)
- Mustard seeds - 1/4 tsp
- Urad dhal - 1/2 tsp
- Asafoetida- A generous pinch
- Curry leaves - few
Method :
- Pressure cook arbi/ Seppankinzhagu. Peel it's seen and cut it into roundels.
- Add turmeric, red chilli powder and salt to the chopped arbi and mix well so that all pieces gets even coating.
- In a pan add oil and temper with items given under to temper.
- Add crushed garlic and sliced onion and saute till transparent.
- now add the arbi and roast till both sides turn golden brown in colour.
- Add more oil if needed.
- It may take 10 to 15 min( approximately)for both the sides to get roasted.
Notes:
- I have mentioned only rough quantity of Seppankinzhagu.
- So increase or decrease the spices according to the quantity you use.
