Arbi (Seppankizhangu) roast

Ingredients:


  • Seppankinzhagu/arbi/ colacassia-1/4 kg 
  • Onion - 1
  • Garlic -2 cloves 
  • Turmeric powder - 1/4tsp
  • Red chilli  powder - 1 tsp 
  • Salt - To taste 

To temper :


  • Oil - 4 tbsp  ( or as needed)
  • Mustard seeds - 1/4 tsp
  • Urad dhal - 1/2 tsp
  • Asafoetida- A generous pinch 
  • Curry leaves - few

Method :

  • Pressure cook arbi/ Seppankinzhagu. Peel it's seen and cut it into roundels. 
  • Add turmeric, red chilli powder and salt to the chopped arbi and mix well so that all pieces gets even coating.
  • In a pan add oil and temper with items given under to temper. 
  • Add crushed garlic and sliced onion and saute till transparent.
  • now add the arbi and roast till both sides turn golden brown in colour.
  • Add more oil if needed.
  • It may take 10 to 15 min( approximately)for both the sides to get roasted.





Notes:

  • I have mentioned only rough quantity of Seppankinzhagu.
  • So increase or decrease the spices according to the quantity you use.
