Capsicum brinjal curry

Want to make simple yet delicious gravy for roti in just 15 mins then this is the one you have to try. This gravy was so tasty and easy to make.I simply loved it. Also very less chopping work😜

Ingredients:

  • Capsicum -1
  • Brinjal -2 ( medium size)
  • Tomato -2
  • Ginger garlic paste - 1 tsp
  • Red chilli powder - 1 tsp
  • Turmeric powder-1/4 tsp 
  • Coriander powder-1 tsp
  • Coriander leaves -1 tbsp
  • Milk -1/4 cup
  • Oil -1 tbsp
  • Salt - To taste 

Method :

  • Cut Capsicum, tomato and Brinjal length wise.
  • In a pan add oil followed by ginger garlic paste. Then add all the chopped veggies.
  • Saute for 2 mins and add all the spice powders and salt.
  • Close the lid and cook in medium flame for 5  to 7 mins.
  • Then add 1/4 cup milk, stir well and boil it for 3 to 4 mins. Turn off the flame.
  • Garnish with Coriander leaves and serve with roti/ chappathi.





Notes :

  •  Those who like garam masala can add 1/2 tsp of it.
  • You can avoid milk and add water according to the consistency you prefer. But milk gives good taste.
