Kovakai / tindora kootu
Serves -3
Ingredients:
- Kovakai - 1&1/2 cup ( chopped lengthwise)
- Moong dhal- 1/2 cup
- Onion -1
- Turmeric powder - 1/4 tsp
- Coriander leaves - 2 tsp
- Salt - To taste
To grind :
- Coconut grated -1/2 cup
- Cumin -1 tsp
- Red chilli- 4 to 5
To temper :
- Oil -2 tsp
- Mustard seeds - 1/2 tsp
- Asafoetida/ L.G. - A generous pinch
- Curry leaves- Few
Method :
- Pressure cook moong dhal and kovakai separately.
- In a pan add oil and temper with items mentioned under ' to temper '. Add finely chopped onion and saute till onion turns transparent.
- Then add cooked kovakai /tindora and moong dhal and water as required.
- Mix well and add salt.
- Grind items given under ' to grind' without adding water.
- Add this coconut mixture to the kootu.
- Mix well. Let it boil for a minute add coriander leaves and turn off the flame.
- Serve with hot rice.
Notes :
- You can replace red chilli with green chilli.
- But I feel the colour which red chilli gives is quite eye appealing
