Lady's finger kaara kuzhambu



Serves 3 to 4

Ingredients:

  • Lady's finger/ vendakkai- 10 nos
  • Tamarind- A small marble size
  • Red chilli powder-1 tsp
  • Green chilli -1
  • Coriander powder- 1&1/4 tsp
  • Turmeric powder-1/4 tsp 
  • Onion -1
  • Tomato-1&1/2
  • Oil -2 tsp
  • Salt - To taste 

To grind:

  • Coconut-1/4 cup
  • Fennel seeds / soambu - 1/4 to 1/2 tsp

To temper :

  • Oil- 3 tsp
  • Mustard seeds -1/4 tsp
  • Urad dhal -1/2 tsp
  • Fenugreek seeds- A pinch
  • Asafoetida- A pinch 
  • Curry leaves - few 

Method :

  •  Cut lady's finger  into 1 inch pieces and saute them with 2 tsp of oil till they are cooked.
  • Grind coconut and Fennel seeds with little water and  make a fine paste.
  • Now in a pan temper with items given under 'to temper' and add finely chopped onion. Cook till it becomes transparent.
  • then add tomato and all the spice powders and cook till it turns mushy.
  • Now add the cooked lady's finger and  tamrind extract and let it boil for 1 minute.
  • Add salt ,coconut paste and water and cook covered in medium flame till oil oozes out ( add more water if necessary).
  • Serve with rice.










Notes :

  • Adjust the consistency of kuzhambu as per your preference by adding water.
  • Balance the sourness as both tomato and Tamarind are added in this.
