Kovakai/ tindora gravy
This gravy is so tasty and so easy to make. I got this recipe from ' amma samayal' a you tube channel.
Serves -2
Ingredients:
- Kovakai / tindora - 1 cup( chopped verticaly)
- Onion -1
- Tomato-1&1/2
- Garlic - 2 to 3 cloves
- Red chilli powder - 1 tsp
- Coriander powder - 1&1/2 tsp
- Turmeric powder-1/4 tsp
- Oil -1 tsp
- Salt - To taste
To temper :
- Oil -3 tsp
- Mustard seeds-1/2 tsp
- Fenugreek seeds- 1/4 tsp
- Urad dhal -1/2 tsp
- Curry leaves - few
- Asafoetida/ L.G - A pinch
Method :
- Slice kovakai/ tindora vertically.
- In a pan add 1 tsp Oil and saute onion and garlic.
- When onion turns transparent add tomato and spice powders.
- Saute till tomato turns mushy.
- Cool it and grind it to a fine paste.
- now in a pan temper with items given under to temper and add kovakai.
- Saute till kovakai turns soft.(sprinkle little water if needed).
- Then add the tomato masala and cook for 7 to 10 mins in a medium flame.
- Serve hot with rice.
Notes :
- Adjust tomato according to its tanginess. ( I used 1/2 onion and 1 tomato).
