Brinjal masala kuzhumbu

Ingredients:

  • Brinjal-4
  • Onion -1 
  • Tamarind - gooseberry size
  • Kuzhambu powder - 1 tsp
  • Turmeric powder- 1/8 tsp
  • Curry leaves - few
  • Salt -To taste

To roast and grind:

  • Channa dhal -1 tsp
  • Coriander seeds - 1 tsp
  • Fennel -1/4 tsp
  • Coconut gratings -1/2 cup
  • Cinnamon- a small piece

To temper:

  • Oil -2 tsp
  • Cinnamon- 1 small piece
  • Cardamom -1
  • Cloves - 2

Method :

  • Roast and grind all the ingredients mentioned under'to roast and grind' to a fine paste.
  • Cut brinjal into shapes you prefer and keep them immersed in water.
  • In a pan add oil and temper with items mentioned under'to temper'.
  • Add sliced onion.once it turns translucent add tamarind extract,2 cups of water,brinjal,Kuzhambu powder,salt and cook till brinjal turns soft.
  • Now add the ground masala and cook till the raw smell disappears. Adjust water consistency.
  • Turn off the flame when you see oil separating from gravy.
  • Serve hot with rice.







Notes:

  • Refer my kuzhambu milagai thool ( Curry masala powder) post.
  • Instead of Kuzhambu powder you can add red chilli powder - 1/3 tap and coriander powder -1 tsp.
  • You can add 1/8 tsp of jaggery finally.
