Brinjal masala kuzhumbu
Ingredients:
- Brinjal-4
- Onion -1
- Tamarind - gooseberry size
- Kuzhambu powder - 1 tsp
- Turmeric powder- 1/8 tsp
- Curry leaves - few
- Salt -To taste
To roast and grind:
- Channa dhal -1 tsp
- Coriander seeds - 1 tsp
- Fennel -1/4 tsp
- Coconut gratings -1/2 cup
- Cinnamon- a small piece
To temper:
- Oil -2 tsp
- Cinnamon- 1 small piece
- Cardamom -1
- Cloves - 2
Method :
- Roast and grind all the ingredients mentioned under'to roast and grind' to a fine paste.
- Cut brinjal into shapes you prefer and keep them immersed in water.
- In a pan add oil and temper with items mentioned under'to temper'.
- Add sliced onion.once it turns translucent add tamarind extract,2 cups of water,brinjal,Kuzhambu powder,salt and cook till brinjal turns soft.
- Now add the ground masala and cook till the raw smell disappears. Adjust water consistency.
- Turn off the flame when you see oil separating from gravy.
- Serve hot with rice.
Notes:
- Refer my kuzhambu milagai thool ( Curry masala powder) post.
- Instead of Kuzhambu powder you can add red chilli powder - 1/3 tap and coriander powder -1 tsp.
- You can add 1/8 tsp of jaggery finally.
