Vegetable Soup
Serves-3
Ingredients:
- Mixed vegetables - 1&1/2 cup ( carrot, beans, cabbage, sweet corn)
- Corn flour- 1 tsp
- Pepper powder - to taste
- Oil- 1 tsp
- Garlic- 3 cloves
- Bay leaf -1
- Onion -1/2
- Spring onion -1/4 bunch ( optional)
- Coriander leaves - For garnish
- Salt - to taste
Method:
- Chilli vegetables very finely.
- In a pressure cooker add oil followed by bay leaf,finely chopped garlic, and white part of spring onion.
- Saute for few secs and then add finely chopped onion and all the veggies. Stir well.
- Let it cook for 2 mins.
- Add required salt and 2 cups of water and pressure cook for 3 whistles.
- Mix corn flour with little water and keep it ready.
- After the pressure settles down, remove the lid and place it again on the flame and then add the corn flour mixture.
- Cook for 30 secs. Add green part of spring onion or coriander. Add black pepper powder.
- Serve hot.
Notes:
- You can avoid spring onion.
