Vegetable Soup


Serves-3

Ingredients:

  • Mixed vegetables - 1&1/2 cup ( carrot, beans, cabbage, sweet corn)
  • Corn flour- 1 tsp
  • Pepper powder - to taste
  • Oil- 1 tsp
  • Garlic- 3  cloves
  • Bay leaf -1
  • Onion -1/2
  • Spring onion -1/4 bunch ( optional)
  • Coriander leaves - For garnish
  • Salt - to taste

Method:

  • Chilli vegetables very finely.
  • In a pressure cooker add oil followed by bay leaf,finely chopped garlic, and white part of spring onion.
  • Saute for few secs and then add finely chopped onion and all the veggies. Stir well.
  • Let it cook for 2 mins.
  • Add required salt and 2 cups of water and pressure cook for 3 whistles.
  • Mix corn flour with little water and keep it ready.
  • After the pressure settles down, remove the lid and place it again on the flame and then add the corn flour mixture.
  • Cook for  30 secs. Add green part of spring onion or coriander. Add black pepper powder.
  • Serve hot.








Notes:

  • You can avoid spring onion.
