Bitter gourd fries

Having bitter gourd as poriyal or as kootu  is quite difficult but as fries is much better:) Since it is deep fried 75% of the bitterness disappears.So can try this without any hesitation.

Ingredients:

  • Oil -To deep fry

To remove the bitterness:

  • Bitter gourd -2
  • Curd -3 tbsp
  • Turmeric -1/4 tsp
  • Tamarind water -3 tbsp
  • Salt -1/4 tsp

To marinate:

  • Rice flour -2 tbsp
  • Corn flour -1 tsp(optional)
  • Red chilli powder -3/4 tsp
  • Coriander powder -1 tsp
  • Turmeric powder -1/4 tsp
  • Salt -To taste

Method:

  • Slice the bitter gourd into thin slices.
  • Soak them with the ingredients given under 'to remove bitterness' for 15  mins.
  • Wash them twice or thrice with water.
  • Now in a bowl add washed bitter gourd,and marinate with items given under 'to marinate' for 10 about mins.
  • Now deep fry in oil.




Notes:

  • Tastes best when it is crispy.
  • Fry them just before serving else it turns out to be soggy.
