Ennai kathirikai

Once when we went to kodaikanal I came across this in the hotel menu,in spite of knowing that my husband is a brinjal hater I ordered this.To my surprise my husband loved it, of course even I loved it.As usal I searched for the recipe and got it.Try this and enjoy.
Ingredients:
- Brinjal -4 nos(small)
- Oil -For shallow/deep fry
- Onion -1
- Tomato -1
- Ginger -1/2 inch piece
- Garlic -3 cloves
- Coconut scrappings -1/4 cup
- Turmeric powder -1/4 tsp
- Red chilli powder -1 tsp
- Coriander powder -1&1/2 tsp
- Tamrind extract -1/4 cup
- Jaggery -1/4 tsp
- Salt -To taste.
To temper:
- Red chilli -3 nos
- Urad dhal -1 tsp
- Curry leaves -1 spring
- Oil -1/4 cup
- Mustard seeds -1/4 tsp
- Fenugreek seeds -1/4 tsp
Method:
- In a pan add oil,ginger, garlic followed by onion.
- Saute till onion turns transparent and then add tomato.
- Add the spice powders and cook till tomato turns mushy.
- Add coconut scrappings,stir for a minute and turn off the gas.
- When it cools down grind it to a paste adding little water.
- Now slit the brinjal into four (do not cut the crown part) and shallow or deep fry them till it becomes soft.
- Now in a temper with items given under 'to temper'.
- Now add the grinded paste,salt and cook it closed in medium flame till it becomes dry.Stir in between.
- Now add the tamrind extarct , water and allow it to boil till oil oozes out.
- Add the fried brinjal,jaggery and allow it to boil again for 4 mins.
- Turn off the gas and serve with rice.
Notes:
- Use sesame oil for best result.
- you can add more red chilli powder if you want it to be very spicy.
