Ennai kathirikai

Once when we went to kodaikanal I came across this in the hotel menu,in spite of knowing that my husband is a brinjal hater I ordered this.To my surprise my husband loved it, of course even I loved it.As usal I searched for the recipe and got it.Try this and enjoy.

Ingredients:

  • Brinjal -4 nos(small)
  • Oil -For shallow/deep fry
  • Onion -1
  • Tomato -1
  • Ginger -1/2 inch piece
  • Garlic -3 cloves
  • Coconut scrappings -1/4 cup
  • Turmeric powder -1/4 tsp
  • Red chilli powder -1 tsp
  • Coriander powder -1&1/2 tsp
  • Tamrind extract -1/4 cup
  • Jaggery -1/4 tsp
  • Salt -To taste.

To temper:

  • Red chilli -3 nos
  • Urad dhal -1 tsp
  • Curry leaves -1 spring
  • Oil -1/4 cup
  • Mustard seeds -1/4  tsp
  • Fenugreek seeds -1/4 tsp

Method:

  • In a pan add oil,ginger, garlic followed by onion.
  • Saute till onion turns transparent and then add tomato.
  • Add the spice powders and cook till tomato turns mushy.
  • Add coconut scrappings,stir for a minute and turn off the gas.
  • When it cools down grind it to a paste adding little water.
  • Now slit the brinjal into four (do not cut the crown part) and shallow or deep fry them till it becomes soft.
  • Now in a temper with items given under 'to temper'.
  • Now add the grinded paste,salt and cook it closed in medium flame till it becomes dry.Stir in between.
  • Now add the tamrind extarct , water and allow it to boil till oil oozes out.
  • Add the fried brinjal,jaggery and allow it to boil again for 4 mins.
  • Turn off the gas and serve with rice.


















Notes:

  • Use sesame oil for best result.
  • you can add more red chilli powder if you want it to be very spicy.
