Bittergourd poriyal

In my in- laws home they make poriyal with bitter gourd.I will avoid it.Eating bitter gourd that to as poriyal is a nightmare.This is my MIL's recipe and it turned out well.
Ingredients:
To remove the bitterness:
- Bitter gourd -2
- Sour curd -3 tbsp
- Turmeric -1/4 tsp
- Salt -1/4 tsp
For poriyal:
- Oil -2 tbsp
- Onion -1 medium
- Mustard seeds -1/4 tsp
- Urad dhal -1/2 tsp
- Curry leaves -Few
- Turmeric powder -1/4 tsp
- Red chilli powder -1/2-3/4 tsp
- Coriander powder -1/2 tsp (optional)
- Salt -To taste
Method:
- Slice the bitter gourd into thin slices.
- Soak them with the ingredients given under 'to remove bitterness' for 15 mins.
- Wash them twice or thrice with water.
- Now in a pan add oil,mustard seeds,urad dhal,curry leaves.
- Then add sliced onion and cook till turns transparent.
- Then add washed bitter gourd.
- Cook until it is fully done.Then add red chilli ,turmeric powder and salt to taste. Mix well and cook till raw smell of the spices disappears.
- Finally add sugar and turn off the gas.
Notes:
- You can try sprinkling tamarind water while cooking the veggie if you feel it is still bitter.
- If you don't have sour curd then you can soak the vegetable in tamarind water itself.
