Pav Bhaji

The first chat item which I ate was pav bhaji. I love the touch of butter and softness of pav(bun) and spicy vegetable gravy (bhaji).It is very easy to make at home and you will definitely achieve shop bought pav bhaji's taste
Ingredients:
Mixed vegetables -2 cups(carrot,cauliflower,potato,beans,capsicum)
Butter -3 tbsp
Onion -2
Toamto -2
Ginger garlic paste -1 tsp
Red chilli powder -1&1/2 tsp
Turmeric powder -1/4 tsp
Pav bhaji masala -1/2 tsp
Coriander leaves -3 tbsp
Kasoori methi -1 tsp (optional)
Lemon -1 (optional)
Ready made pav/bun/bread
Salt -To taste
Method:
Wash the vegetables and pressure cook them for 5-6 whistles.Once they are done mash them and keep it aside.
Now in a pan add 1 tbsp butter followed by onion and ginger garlic paste.
When onion turns transparent add tomato and coom them till it turns mushy.
Now add all the spice powders and salt.
Add the mashed vegetables along with the water in which it got cooked.Add more water if it is necessary.
Allow it to boil,Crush the kasoori methi and them.
Now add 1-2 tbsp of butter.
Check for spices and salt.
Now toast pav/bun with butter on both sides,
Squeeze lemon on bhaji at the time of serving and top it up with extra onion and butter.
