Curry leaves Rice

People generally throw away the curry leaves from their food.But Curry leaves has lot of nutritional benefits in it.So having Curry leaves rice is the best way to include curry leaves in our food and it is also a best variety rice for lunch box.

Ingredients:

  • Cooked rice -2 cup
  • Curry leaves -1 cup
  • Coconut scrapings -1/4 cup
  • Red chilli -7-8 nos
  • Channa dhal -1 tsp
  • Urad dhal -1 tsp
  • Oil -1 tsp
  • Salt -To taste

To temper:

  • Oil -1 tsp
  • Channa dhal-1 tsp
  • Urad dhal -1 tsp
  • Cashew nuts -3-4
  • Curry leaves -Few
  • Asafoetida -A pinch

Method:

  • Wash curry leaves and drain them completely.
  • In a pan add oil,channa dhal,urad dhal when it turns golden brown add red chilli .
  • Add coconut scrapings and roast till it turns golden brown,finally add curry leaves and roast them nicely.
  • Add salt and powder them in a mixie.
  • Now mix cooked rice,powdered curry leaves mixture and temper it with items given under 'to temper'.
  • Check for salt and serve.








Notes:

  • Reduce or increase red chilli as per your wish.
  • You can also first roast curry leaves separately and then add it to the rest of the roasted items.
