Tomato Thokku



 Serves -4 or 5
This tomato thokku is my mom's recipe.This is no onion no garlic version.I love this soooo much, a perfect match for all breakfast items.I love to have this with idli and dosa.Its tangy spicy taste is just awesome.It is so easy to make.Each have their own recipe for tomato thokku .This is my mom's simple version. Can be stored in refrigerator for 3-4 days.

Ingredients:

Tomatoes -7 large
Oil -3 tbsp
Mustard seeds -1/4 tsp
Urad dhal -1/2 tsp(optional).
Red chilli powder -2 tbsp
Turmeric powder -1/4 tsp(optional)
Fenugreek seeds powder -1/4 tsp
Green chilli -3
Asafoetida -A pinch.
Coriander leaves -1 tsp
Curry leaves -Few
Sugar -A pinch
Salt -To taste 

Method:

Blanch tomatoes ,peel its skin and make it into puree.(Do not add water).
Now in a pan add oil and temper it with mustard seeds,urad dhal andcurry leaves.
Then add the tomato puree.
Add all the spice powders, and a pinch of sugar.
Allow it to boil in a medium flame.Let it boil for about 20 mins.or till the tomato puree thickens.
Check for salt and spice.Finally add coriander leaves.Serve.






Notes:

Adjust red chilli powder and salt according to your taste buds.
