Pineapple Kesari

If it is kesari then it must be pineapple kesari for me.The sweet and sour taste of pineapple gives a very good flavour to kesari. You can make this in a jiffy.
Ingridients:
- Pineapple - 2 slices
- Sooji/Rava - 1 Cup
- Sugar - 2 Cups
- Water - 3 Cups
- Ghee - 1/4 to 1/2 cup
- Cashews - Few
- Raisins - Few
- Pistachios - Few
- Cardamom - A pinch
- Yellow food colour - Few drops
- Pineapple Essence - Few drops
- Salt - A pinch
Method:
- Roast sooji with ghee in a pan.
- Add water and wait till boils. Cut one slice of pineapple into small pieces and add it to the boiling water.
- Add sooji and wait till it gets cooked.
- Make pineapple puree with another slice.
- Add pineapple puree,food colour,sugar,essence and a pinch of salt.
- Add ghee as you are stirring.
- Fry nuts and raisins in ghee and add it to the kesari.
- Serve hot!!!
Notes:
- You can also add boiling water directly to the roasted rava and then carry on with rest of the procedure.
- Add salt only a pinch so that it would enhance the taste.
- My measuring cup was small and this served 2.
- You can make this with oil also. If so finally add ghee for the flavour.
- You can avoid adding Pineapple essence.
