Puliyodharai Mix
Makes 1 cup of mix
Going a long train journey.... then there must definitely be Puliyodharai sadam/tamrind rice for us. It is also given as 'prasadam' in many temples. This mouth watering mix is a favourite to many.
Each one follows their particular recipe. This is my mom's version of doing it and I love it.It is made by first making a special powder and next by making mix out of that powder. Lets see how it is made,
Ingredients:
To make powder:
- Oil -5 tsp
- Corriander seeds -7 Tbsp
- Cumin -3 Tbsp
- White sesame seeds -3Tbsp
- Fenugreek seeds -1 Tbsp
- Whole black pepper -2 Tbsp
- Red chilli -6 nos
- Turmeric powder -1 tsp
- Asofoetida -1/2 tsp
To make mix:
- Tamrind -2 Gooseberry size
- Sesame oil -1/2 cup
- Mustard seeds -1 tsp
- Urad dhal -1 Tbsp
- Channa dhal-1 Tbsp
- Red chilli -3 nos
- Ground nuts -1/4 cup
- Asofoetida -1/2 tsp
- Curry leaves -2 spring
- Jaggery -1/2 to 1 tsp
- Salt -To taste
Method:
- Roast all the ingredients one by one in oil except turmeric and asofoetida.
- Make it into fine powder by adding turmeric and asofoetida.
- Soak tamrind in luke warm water and extract 2 cups of tamrind water.
- Now in a pan add oil, Mustard seeds,channa dhal,urad dhal,Red chilli,Groundnuts and fry till it turns golden brown.
- Add curry leaves ,Asofoetida and tamrind extract.
- Cook till raw smell of tamrind water goes.
- Add salt and add 3Tbsp puliyodharai powder and allow it to boil till oil separates.
- Finally add jaggery and turn off the flame.
Notes:
- You can reduce or increase the powder.
- Store the powder in air tight container and refrigerate it so that you can make mix whenever you wish.
- You can use sunflower oil also.
- You can reduce or increase red chilli to your taste.
- Adding Baedige/kashmiri chilli while making powder gives good colour for the mix.
- Tamrind extact should not be too watery.
- You can avoid jaggery.
