Vegetable kurma type 2



Serves-4

Kurma is generally loved by everyone.This kurma goes well with roti/chapathi/phulkas/parotta.

Ingredients:

For grinding:

  • Coconut -1 cup
  • Gram dhal -2 Tbsp 
  • Fennel seeds -1 tsp
  • Cashewnuts - 5-6 nos

For gravy:

  • Oil -5 tbsp             
  • Cloves -3 nos
  • Cinnamon -1 small stick
  • Bay leaf -1 no
  • Cardamom -1 no
  • Ginger garlic paste -1 tsp 
  • Green chilli -2 nos
  • Onion -2 medium size
  • Tomato -2 large
  • Mixed vegetables -3 cups
  • Red chilli powder -1&1/2 tsp
  • Garam masala -1/2 tsp
  • Turmeric powder -1/2 tsp
  • Mint leaves -1 handful
  • Coriander leaves -1 handful
  • Salt -To taste

Method:

  • Grind all the ingredients given under 'for grinding'.
  • In a pressure cooker add oil, cloves,cardamom,cinnamon,bay leaf,ginger galic paste.
  • Add onion and saute till it turns golden brown,add green chilli and tomatoes and cook till it turns mushy.
  • Add turmeric powder,red chilli powder,and garam masala,salt.
  • Add all the vegetables and saute for 2 mins
  • Now add the grinded paste and mix well.
  • Finally add mint leaves and coriander leaves. Add 2 cups of water.
  • Check for salt  and pressure cook it for 2-3 whistles.













Notes:

  • I used carrot,beans,peas,cauliflower and potato.
