Vegetable kurma type 2
Serves-4
Kurma is generally loved by everyone.This kurma goes well with roti/chapathi/phulkas/parotta.
Ingredients:
For grinding:
- Coconut -1 cup
- Gram dhal -2 Tbsp
- Fennel seeds -1 tsp
- Cashewnuts - 5-6 nos
For gravy:
- Oil -5 tbsp
- Cloves -3 nos
- Cinnamon -1 small stick
- Bay leaf -1 no
- Cardamom -1 no
- Ginger garlic paste -1 tsp
- Green chilli -2 nos
- Onion -2 medium size
- Tomato -2 large
- Mixed vegetables -3 cups
- Red chilli powder -1&1/2 tsp
- Garam masala -1/2 tsp
- Turmeric powder -1/2 tsp
- Mint leaves -1 handful
- Coriander leaves -1 handful
- Salt -To taste
Method:
- Grind all the ingredients given under 'for grinding'.
- In a pressure cooker add oil, cloves,cardamom,cinnamon,bay leaf,ginger galic paste.
- Add onion and saute till it turns golden brown,add green chilli and tomatoes and cook till it turns mushy.
- Add turmeric powder,red chilli powder,and garam masala,salt.
- Add all the vegetables and saute for 2 mins
- Now add the grinded paste and mix well.
- Finally add mint leaves and coriander leaves. Add 2 cups of water.
- Check for salt and pressure cook it for 2-3 whistles.
Notes:
- I used carrot,beans,peas,cauliflower and potato.
